Let's take a look at a recent tasting that was done at the catering company 24 Carrots, an exceptional caterer located in Irvine, California. Our venue is featured on their website, so it was time to go sit down with them and enjoy a tasting of their kitchen magic.

Great caterers are always innovating, trying to find new and creative ways to serve their culinary creations. It wasn't too long ago that the Asian spoon was the MUST-HAVE catering tool. 24 Carrots realized it is now commonplace to see the Asian spoons on almost every catering menu, so they set out to reinterpret the concept using brioche crafted in the shape of the spoon. Now you don't need to lick the spoon, you can simply eat it. BRILLIANT!

PEPPER JACK WONTONS with STRAWBERRY MERLOT REDUCTION

An important factor when choosing a caterer is feeling confident they understand your vision. The appetizers must be easy to eat, not too messy, and have big flavor in small bites. They should also harmonize with the theme of your event. Your caterer should be very tuned in to what your looking for and help you achieve your goal.

INDIVIDUAL SHRIMP COCKTAIL

Along with seeking out an innovative caterer, you should make sure they can interpret the classics in fresh exciting ways. What better way to see a classic in action than a shrimp cocktail?

BAKLAVA CHICKEN LOLLIPOPS with PESTO, HONEY, and PISTACHIOS

Like the Asian spoon transformation, 24 Carrots also took the routine chicken skewer and turned it into something new and exciting. Creating a crispy coating of Baklava pastry takes these skewers to a whole new level of taste!

MINI WALDORF SALAD IN A BACON CUP

One constant challenge for all great caterers is finding bases and serving vessels that are edible. This creates more excitement with the bites, and reduces the amount of clean-up of discarded serving dishes. With bacon being such a rage, this mini salad works on so many levels; it's old school salad meets innovative bacon cup in one bite!

Oh the fun that can be had with a basic slider. This little bite is stacked with amazing flavors; no wonder they named it after their company! Add a tiny bottle of soda and you have a retro burger joint all wrapped up in the fun!

COMPRESSED SALAD OF BABY ARUGULA with MANCHEGO CHEESE, GALA APPLES, SUNDRIED CRANBERRIES, CARAMELIZED PECANS & TEARDROP TOMATOES with AGED BALSAMIC VINAIGRETTE

Salads are always a challenge. What makes this particular salad so wonderful is how simple it looks, yet once you dig in, the center is stacked with all the wonderful ingredients hidden in the center of the mold.

Now that we've gone through the appetizer tasting, let's look at an entrée and some sweets.

PEPPERCORN CRUSTED FILET MIGNON & PAN-SEARED ALASKAN HALIBUT

For this tasting the two entrées were served surf & turf style. Depending on your wishes as the client, this can be served this way, or you could offer a choice of the filet or the fish. The filet on this plate was topped with a pat of Café de Paris Butter with Balsamic Reduction and the fish had a wonderful Lemon Butter Sauce.

Finally, let's finish this journey with some amazing sweets!

ASSORTED MINIATURE PASTRIES - BLACKBERRY TRUFFLE, CHOCOLATE MOUSSE CUP, MINI CHEESECAKE, AND FRESH FRUIT TART

These were all amazing; however, if I were the client planning my menu, I would have chosen my favorite for the plated desert...

MINI FRUIT TART

For me, this would be a perfect desert after a rich sumptuous meal. It's not only beautiful, but light and refreshing.
